Roasted corn at Mexico street stands is one of those things you must eat in Mexico. You can buy it by the ear or chow the shelled kernels from a cup with mayo and cream. Remember to step off the beaten path for often-memorable meals in Mexico (and an incredibly edible ear of street vendor-roasted Mexican corn, dosed with lime and chile powder, is memory-making indeed).
