The views from Denver to Winter Park on Amtrak's California Zephyr are among the most gorgeous on that train's Sacramento-Chicago route. The train takes its time climbing into the Rockies and everyone gets an outside breather for a breath of high-up-there air at Winter Park, Colorado, a couple of hours by train from Denver. This is also the route for Colorado's famous Ski Train (operates in winter, natch).
You can hop off the train during an Amtrak trip for leg-stretching breaks at a station stop like this -- sometimes these stops are announced over the train's PA system, and sometimes you must do the detective work by looking at a train schedule and noting the names of stops. You can get schedules on board from an attendant or, if you're in a sleeper, behind the fold-down table.
